• 40 quart capacity bowl with optional reduction kit to convert to a 30 quart capacity without the need for bowl adaptors
• Variable speed with quick-shift allows the operator to adjust speed from 53-288 RPMs during mixing
• Front-mounted controls with 90-minute digital timer, power bowl lift and emergency stop, easily visible from across the kitchen
• Ergonomic operation - hydraulic bowl dampener gently lowers bowl and unique bowl arms automatically align bowl when raised
